Gluten Free, Paleo & Vegan Banana Muffins
Inspired by one of my best friends and business partner, Merritt Kinkade, this recipe was developed to prove that delicious recipes are possible, regarless of your dietary needs. Battling Hashimoto's disease, an autoimmune disorder that attacks the thyroid, thus causing hypothyroidism, inflammation and hormonal shifts, cutting out gluten has been the most effective treatment for Merritt in managing her health. Merritt raves about these muffins so we're sharing the love with this easy and delicious recipe!
Banana Chocolate Chip Muffins
Makes about 1 dozen muffins
1 1/4 cup almond flour
1/4 tsp baking soda
1/4 tsp salt (optionl)
3/4 tsp baking powder
1/4 tsp cinnamon OR pumpkin pie spice
1 egg, beaten (or 1 tbsp flaxseed + 3 tbsp water for a Vegan recipe)
3 ripe bananas
3 tbsp honey (or maple syrup for a Vegan recipe)
1/2 tsp vanilla extract
1/4 cup olive or coconut oil
3/4 cup dark chocolate chips (optional --- nearly all dark chocolate is Vegan)
Spray muffin pan with olive oil spray or any cooking spray and preheat oven to 350 degrees.
In a large mixing bowl, combine almond flour, baking soda, salt, baking powder and cinnmon. Whisk together until thoroughly mixed.
In separate bowl, mash together the egg, bananas, honey, vanilla extract and oil.
Add banana mix to dry mix, add dark chocolate chips and pour batter into muffin tins.
Bake for 30-45 minutes or until toothpick comes out clean.
