5 Ingredients, 20 Minutes, Dinner All Week

Introducing my cooking show debut! Well, not exactly... but I do love this super simple, super delicious and healthy zoodle "pasta" recipe (courtesy of The Party Helpers - thepartyhelpers.com). This recipe is low carb, Paleo, vegetarian, vegan, Whole30 friendly, dairy free and soy free. WOW!

Note: add your choice of protein such as lean ground beef, tofu or chickpeas for a filling meal.


(Makes about 4 servings)

  • 3 medium zucchini

  • 1/2 red onion, sliced

  • 2 cloves garlic, minced

  • 2 cans fire roasted tomatoes (I used 14 oz cans)

  • 1 tbsp. olive oil

  • Lean ground beef, sausage, ground turkey, tofu or chickpeas (optional for an added protein source)


  1. Peel zucchini or use a spiralizerto make the zucchini noodles and set aside.

  2. Chop up remaining zucchini and set aside.

  3. Slice onion and garlic and add to 1/2 tbsp olive oil. Saute over medium heat for about 5 minutes.

  4. Add tomatoes and chopped zucchini to onion and garlic and simmer. Meanwhile, heat zucchini noodles in 1/2 tbsp olive oil over medium low heat for about 10-15 minutes.

  5. Once zucchini noodles reach desired consistency, serve in a bowl and top with tomato sauce mixture.
