A New Take On Tots!
Baked broccoli tots with only 7 ingredients! These tots are vegetarian and gluten free (but can easily be made dairy free, Paleo and within the Whole 30 plan by omitting the cheese). Broccoli is a great source of fiber, vitamin C and vitamin K and can help reduce cholesterol.
(Makes about 3 servings or 20 tots)
2 cups broccoli, finely chopped (by hand or in food processor)
1 egg, whisked
1/2 cup almond flour
1/2 cup shredded cheese of choice (I used pepper jack)
1 tbsp. basil
1/2 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. pepper
Preheat oven to 350 degrees.
Finely chop broccoli (by hand or in food processor) and combine with whisked egg, almond flour, cheese, basil, garlic powder, salt and pepper in a medium bowl. Mix well.
Line a baking sheet with aluminum foil and spray with olive oil spray.
Form broccoli mixture into balls and place on baking sheet. Bake for 20-25 minutes.
(Optional) Dip in mustard for a healthy snack!
