15 Minute Bean, Shaved Brussels & Heirloom Tomato Salad

By some miracle, my baby napped for more than 30 minutes, giving me a short window to squeeze in a quick, healthy and flavorful meal! We're all busy - especially moms and most especially working moms - and if you're a busy human but you still want to be healthy, you need to try this recipe... note - nothing is precise, measured, or really given a second thought because I'm in the working mom category and just really don't have time for all that. Rest assured, if you throw these ingredients together in a bowl, taste it a couple times and adjust some things, it will turn out delicious!

Prep time: 15 minutes

Servings: No idea! Maybe 4 people?


  • 1 can rinsed and drained black beans (or any beans of choice, I would've used garbanzo beans but all we had were black beans)

  • 1-2 handfuls of shaved brussel sprouts (bought already shaved from Trader Joe's)

  • 2 small cucumbers, sliced

  • 1 handful of baby heirloom tomatoes, diced

  • 1/2 red onion, diced

  • About 2 tbsp cilantro (feel free to omit or sub basil, parsley or any herb you like)

  • About 4 tbsp olive oil

  • Juice from 3 limes

  • Dash of salt, pepper and garlic powder (to taste)


1. Add all ingredients to a large bowl, mix, taste, add more of any ingredient if needed and eat!

Tips for a quicker prep time:

  • Buy vegetables pre-cut

  • Used canned beans

  • Don't measure anything

  • Use a large glass pyrex bowl for mixing so you can just put a lid on it and throw in the fridge after it's done - less to clean up!

This is a perfect summer salad for any BBQ or even as a mid-afternoon snack. It's a great way to get a variety of vegetables into your meal and the beans provide a good serving of protein to help keep you full and energized longer. Enjoy!
