Whether you're dealing with picky eaters who spit out their vegetables or following a low carb lifestyle, this delicious and nutrient rich cauliflower pizza is something that the whole family will love!
My 15 month old has recently become quite picky when it comes to certain foods so I’ve started sneaking vegetables into his meals (doesn’t he know that his mom is a dietitian?!) Some quick hacks that have been successful so far are mixing spinach in with scrambled eggs, adding finely chopped broccoli to spaghetti and zucchini carrot muffins. But my favorite sneaky veggie dish so far is cauliflower pizza. You’ve got to give this recipe a try!
Makes 24 small slices (feeds 2-3 people)
2 cups cauliflower, riced
1/4 cup parmesan cheese
Dash of garlic
Dash of salt and pepper
Dash of oregano and basil
**1-2 tbsp flour if dough is too wet (1 used 2 tbsp of coconut flour in my batch!)
1/2 cup marinara or pizza sauce (I used Whole Foods organic marinara sauce)
1/2 cup shredded mozzarella cheese
Your choice of toppings (I used steamed and finely chopped broccoli but you could also use spinach, bell pepper, mushroom, olives, tomatoes or any other vegetables!)
Preheat oven the 450 degrees.
Chop cauliflower into florets and mince until it’s “rice” like in a food processor (OR you can buy riced cauliflower from Trader Joe’s - in the refrigerated section).
Cook riced cauliflower in the microwave for 5-8 minutes (do not add water).
Let cooked cauliflower cool and then, using a cheese cloth or paper towels, squeeze out all the water from the cauliflower (this is an important step!)
Mix together cauliflower, egg, parmesan cheese and seasonings (add flour if the “dough” is too wet).
Put dough on a greased baking sheet, flatten in the shape of pizza dough and make for 15 minutes.
After cauliflower crust is done baking add sauce and toppings and broil for another 3-5 minutes (just until cheese melts).
