30 Minute Meal: Family Friendly, Paleo, Whole30 & Keto Approved

A simple, fast and delicious meal the whole family will love (ok, kids might not love the Brussels sprouts, let be real)! Coconut chicken tenders, gnocchi with kale and cashew pesto (vegan) and roasted Brussels sprouts (also vegan) - YUM!
I used a recipe I round on Pinterest for the coconut chicken tenders. I've made almond flour chicken tenders in the past and I prefer the coconut flour (it seems to stick better). Here is the recipe.
Pesto Cauliflower Gnocchi
Cook time: 10-15 minutes
Serves: 4-5 people
Ingredients:
Cauliflower gnocchi from Trader Joe's (frozen section)
Vegan kale and cashew pesto from Trader Joe's (refrigerated section)
Oil of choice (olive, coconut, avocado, etc)


Directions:
Heat oil over medium high heat and add entire bag of frozen cauliflower gnocchi.
Cover and cook for 5-10 minutes and then stir. Keep stirring gnocchi until cooked through, then add about 1/4 cup pesto.
Enjoy!
Roasted Brussels Sprouts
Cook Time: 20 minutes
Serves: 4-5 people
Ingredients:
2-3 cups Brussels sprouts
2 tbsp oil of choice
Salt, pepper and any additional seasonings
Directions
Pre-heat oven to 425 degrees.
Rinse Brussels sprouts and cut in half. Place on un-greased baking sheet and add 2 tbsp oil and seasonings.
Bake for 20 minutes and enjoy!
