Citrus Infused Greens with Pantry and Fridge Staples

I have a lemon tree busting at the seams and I've been trying to find new ways to use lemons in my recipes. With this spring-like weather, a salad sounded like a delicious lunch but no dressing in the pantry! I threw together this dressing in 30 seconds with whatever was in my spice drawer and then threw together a salad with dinner leftovers and whatever vegetables I found in the fridge. So quick and easy!

Citrus Vinaigrette Dressing


  • 2 tbsp olive oil (or any oil you have on hand: avocado, coconut, sesame, canola)

  • Juice from 1 small lemon

  • 1 tsp garlic powder (or fresh minced garlic)

  • 1 tsp salt

  • 1 tsp pepper

  • 1/2 tsp cayenne pepper

*Add or omit any seasonings depending on your preferences (i.e basil, oregano, onion powder, lemon pepper)

This dressing is perfect for a salad, rice or quinoa bowl, roasted vegetables, grilled fish or even drizzled over avocado for an afternoon snack!

Salad (as pictured above):

  • Spinach

  • Roasted Brussels sprouts (leftover from dinner)

  • Black beans (leftover from dinner)

  • Corn (from the freezer)

  • Avocado

  • Shredded cheese

  • About 2 tbsp citrus dressing
