Citrus Infused Greens with Pantry and Fridge Staples

I have a lemon tree busting at the seams and I've been trying to find new ways to use lemons in my recipes. With this spring-like weather, a salad sounded like a delicious lunch but no dressing in the pantry! I threw together this dressing in 30 seconds with whatever was in my spice drawer and then threw together a salad with dinner leftovers and whatever vegetables I found in the fridge. So quick and easy!

Citrus Vinaigrette Dressing
Ingredients:
2 tbsp olive oil (or any oil you have on hand: avocado, coconut, sesame, canola)
Juice from 1 small lemon
1 tsp garlic powder (or fresh minced garlic)
1 tsp salt
1 tsp pepper
1/2 tsp cayenne pepper
*Add or omit any seasonings depending on your preferences (i.e basil, oregano, onion powder, lemon pepper)
This dressing is perfect for a salad, rice or quinoa bowl, roasted vegetables, grilled fish or even drizzled over avocado for an afternoon snack!
Salad (as pictured above):
Spinach
Roasted Brussels sprouts (leftover from dinner)
Black beans (leftover from dinner)
Corn (from the freezer)
Avocado
Shredded cheese
